Cook Once - Eat Three Times!

These are crazy times my friend. Today, all my kids' schools were closed and GCSEs and A Levels were canceled. It seems that every couple of hours something new and even more shocking happens. If you are feeling confused, lost, scared and not just a little bit angry, then you are not alone. We are all in this together. I know you're email has probably been flooded with Corona updates from everyone you ever bought something from or every restaurant that you have been to, and it is all super well meaning. But it all just seems like a lot, right? Just more stuff you need to cancel, rearrange and deal with.

I wish I had the answers, but I don't. What I do have are ideas about offering some practical food advice, because that's what I'm really good at. With all of us facing homes full of kids for every meal, I wanted to put a few things forward to help in a small way with the situation. So here's what I'm going to do:

1) I am putting out this previously recorded facebook live where I give some great tips and ideas about reusing food in creative ways along with some fantastic ingredients I like to use

2) I am attaching my FREE guide on how to Cook Once and Eat Three Times to the bottom of this vlog to give you some great recipes and ideas.

3) I am putting together a mini-course called the Feed Your Family Formula which will have a total two week solution to feeding your family with menu plans, recipes, shopping lists and strategies for batch cooking and reusing so that you don't have to spend all your time in the kitchen! This will be coming out next week and I really hope you find it helpful.

Do you ever get so busy running around trying to squeeze in a million and one things into your day that you schedule out your lunch? I used to do that all the time! 

Instead of taking the time to eat something nutritious, delicious and sustaining, I was always trying to fit one more thing in like:

  • Writing one more post
  • Making one more quick call
  • Running a quick errand
  • Booking a doctor’s appointment
  • Buying that thing on Amazon
  • Editing an email 

You know, the small things that you try to just squeeze in but end up taking much longer than you think. Sound familiar at all?­čśé 

So what ended up happening? I ran out of time to make lunch and I was HUNGRY! I don’t know about you, but that made me cranky. Because I invariably had other commitments I had to get to, I ended up grabbing something from the fridge or my cupboard on my way out. It was never something nutritious that would sustain me for the rest of the day, so I ended up reaching for another sugary something around 4ish  to keep me going. In addition to feeling frazzled and out of control, the pounds (or kilos) were also piling on. I knew something had to change, that I had to take action.

So what did I do?

A couple of years ago, I made a New Year’s resolution that I have actually stuck to and it made all the difference for me – I stopped scheduling out my lunch and started meal planning.

One of my biggest takeaways has been how to save TIME while I do this, because let’s face it, that’s the one thing we all definitely need more of, right? I demonstrate this in today's video where I take you through a regular lunch that I Cook Once to Eat Three Times.
