Coconut Cauliflower Rice

I used to make this version of rice for myself and a side of white rice for my husband, but it wasn't long after tasting this dish that he insisted on having this delicious substitute instead!

Serves 4


Ingredients:
 

  • 2 tbsp coconut oil
  • 450g cauliflower
  • 1 bunch coriander
  • Salt and pepper to taste

 

Directions:

  1. Cut cauliflower into florets and throw into food processor.
  2. Pulse a few times until it looks like rice - but don't do it too much or it will go mushy.
  3. Heat 1 tbsp coconut oil in a nonstick frying pan on medium heat.
  4. Add the cauliflower rice and season with salt and pepper. Cook for about 5 minutes, turning occasionally.
  5. Pour the rest of coconut oil onto the rice, mix in and check seasoning. 
  6. Cook a further 2 minutes or until it starts becoming a bit golden.
  7. Mix in the coriander and serve.

 
Notes
