Superfood Porridge

This porridge is completely versatile and you can add or remove ingredients as you like. This is my favourite combination, but it is also delicious garnished with dried blueberries, bananas or strawberries. My version is gluten and dairy free, but you can change that as well if you wish.

10 minutes plus 15 minutes soaking time

Ingredients:
 

For seed mixture:

1 tbsp chia seeds

1 tbsp hemp seeds

1 tbsp flax seeds

1 tbsp pumpkin seeds

2 brazil nuts, roughly chopped

7 pecans, roughly chopped

water to cover

 
For porridge mixture:

20 grams gluten free oats

1 scoop vanilla protein powder

10 grams goji berries

2 dates, pitted and sliced

230 ml unsweetened almond milk

 
For garnish:

20 grams blueberries

a good squeeze of coconut nectar

 

Directions:

  1. Combine all seed mixture ingredients in a bowl and just cover with water. Let soak for 15 minutes
  2. Combine all porridge mixture ingredients in a microwave safe bowl, stir to combine and soak for 15 minutes
  3. Microwave porridge mixture for 2 1/2 minutes on high
  4. Remove from microwave and stir well 
  5. Add seed mixture and stir well.
  6. Add more almond milk if you would like it thinner
  7. Pour into bowl and garnish with blueberries and a healthy squeeze of coconut nectar
  8. Enjoy!

 
Notes
 If you don't have time to soak the mixtures, you can just cook them right away. I always find that I get a better result when I soak though. Sometimes I get it ready, do the school run and microwave it when I get home - then I can enjoy it in peace!
